Rum
Rum is a distilled alcoholic beverage made from sugarcane byproducts such as molasses or sugarcane juice, which gives rum its signature sweet flavour compared to other spirits. The origins of rum is said to be around the 17th century in the Caribbean, where sugarcane was available in mass and slave labour was used to cultivate it. Sugar production generated significant amounts of molasses, which was often distilled into an alcoholic spirit as a way to preserve it. Over time, rum became a popular drink in the region and eventually spread to the rest of the world through trade and colonialism. However, we know that South American countries such as Brazil have written evidence of distillation taking place as early as the first decade of the 1600s, following the planting of sugarcane brought across by Spanish explorers.
Touted as the ‘next big thing’ for the last few years. Rum was supposed to rocket into popularity once the gin market becomes totally saturated with new start distilleries. Rum is not as easy to produce as gin; you must ferment a molasses base before distillation. For gin, you buy rectified spirit and add peels, barks, seeds, spices, fruits, flowers and hey presto! Perhaps these bullish projections come from the rum producers themselves, but the evidence does show something of a slow burn in the right direction.

Spiced rum is a variety of rum that has been flavoured with spices and other natural ingredients to create a unique taste profile. Common spices used in spiced rum include cinnamon, nutmeg, vanilla, cloves, and allspice. The exact ingredients and their proportions can vary widely depending on the brand and the desired flavour profile. Some spiced rums are also sweetened to enhance the taste. The use of spices in rum is believed to have started in the Caribbean, where sailors and pirates added spices to their rations of rum to make it more palatable. Today, spiced rum is popular in cocktails and is often enjoyed on its own, either straight or with mixer.
Dark rum is a type of rum that is characterized by its rich, caramelized flavour and dark colour. The colour and flavour come from ageing the rum in charred oak barrels, which impart flavours of vanilla, caramel, and other wood-based spices. The length of ageing can vary, but most dark rums are aged for at least two years. Dark rum is often used in cocktails, particularly those that call for a stronger, more complex flavour profile, such as the Mai Tai or the Dark and Stormy. It can also be enjoyed straight, either on the rocks or with a mixer, and is sometimes used as a cooking ingredient to add depth of flavour to recipes.
White rum is a type of rum that is characterized by its light colour and milder flavour profile. Unlike dark rum, which is aged in charred oak barrels, white rum is usually not aged or is aged only briefly. As a result, it retains a neutral, smooth taste that makes it a popular choice for cocktails, such as mojitos and daiquiris. White rum can also be enjoyed straight, either on the rocks or with a mixer. The production process for white rum can vary, but it typically involves fermenting sugarcane juice or molasses and then distilling the liquid to produce the final product. Some white rums are filtered to remove impurities and further lighten the colour.
