A Ristretto , or a "corto", is a very short espresso. Originally a ristretto was made by pulling a hand press faster than usual. This resulted in a reduction of caffeine in proportion to the coffee oils. This results in a fuller flavoured coffee, with less bitterness. Galliano created this stunning coffee liqueur using Arabica and Robusta beans to capture the essence of these full-bodied, less bitter Ristretto coffees. It's delicious.
