Those bright, clean, punchy, and aggressively bitter beers that we grew up on formed the foundations of the very industry we embrace today and we’re never ones to shy away from paying homage to those flag-bearing breweries that we wouldn’t exist without here at Polly’s. New Insomnia is a beer that holds its soul in the old school, with a whisper of the new school to bring it into 2025 - a hefty addition of classic C hop Comet at flameout, before even more in the whirlpool sets a foundation of crisp bitterness that runs throughout this beer, before a cold side addition of Lupomax Mosaic brings the new school flair, with floral and fruity notes imparted for a refreshingly balanced trip down the Pacific Highway.
