Inspired by the Spotify playlists that pepper the day throughout the brewhouse and office, we wanted to bring all the greatest hits and crowd pleasers here at Polly’s HQ into a single, smashable pale ale. Featuring the pillarstones and lifeblood of this brewery in Simcoe Mosaic and Citra, we’ve brought Talus to the party to finish this four-hop showcase off with a flourish. Sure we could have gone for Sabro, but with the key being everything working in tandem, we felt like those slightly refined pina colada vibes would play perfectly off the berry medley, juicy stonefruit and fresh cut citrus notes this beer brings to the party.
