Months before Mash Gang even had a name, our first home brew project was Tepache.
A beautiful Mexican staple home ferment made from Pineapple rind, no tepache? No Mash Gang!
We met Adrian from Cervecer?a Paracaidista in Chicago through the Pilot incubator project and we discussed making this crazy tepache inspired pale ale. All the joy of a juicy IPA with the novelty of sour Pineapple, spicy chilli and a background of brown sugar and subtly mixed spice. Something completely different. Enjoy with a dash of Tajin.
